INGREDIENTS:
Dough:
450g of wheat flour
1 teaspoon of salt
16g of fresh yeast (or 8g of dry yeast)
2 tablespoons of olive oil
250 ml of milk
Stuffing:
500g of minced meat
250g of mushrooms
2 red onions
1 zucchini
small jar of black olives
1 red paprika
200g of grated cheddar
Decoration:
1 egg
3 teaspoons of rosemary
Sift flour into the bowl, add salt and yeast (if you are using fresh yeast, first mix them with milk). Make a hole in the middle and pour milk and olive oil. Knead the dough until it is soft and smooth. Form the dough into a round shape cover it with a little bit of olive oil. Leave it in a bowl, under the kitchen cloth for around 1,5h. In the meantime prepare the stuffing. Fry minced meat with sliced mushrooms, onions and zucchini (add salt and pepper and some basil if you want). Cut paprika in cubes and olives in small slices. After the dough doubles its size, knead it once again and divide it into 4 parts. From every part make an oval with a diameter of about 20-25cm. On one half of it put the stuffing and bit of cheese and cover it with the other half. It is important to 'glue' the edges very well. Place calzones on a baking tray, spread beaten egg on the top and sprinkle with rosemary. Bake at 200˚C for about 20 minutes.
